What's your best rabbit dish folks?

In a slow cooker Put the flour coated rabbit in cider (not the fizzy stuff) along with several spoons of honey. Plenty of fresh herbs, sage thyme parsley etc. salt and pepper and carrots and Parsnips if liked. Leave all day on low and the rabbit will fall off the bone. Lovely!

I like it in a stew with vegetable stock, pearl barley, lentils and herb dumplings :yum:

I think its one of those things that if it is young and tender cook it quickly and for a short time, ie flour and fry in butter, and maybe make a mushroom cream and bacon sauce.
If its a bit older then long slow stewing is good, often with fat pork (pigs tails are what I generally use)added to the mix as the meat can be a bit dry. Like the idea in the recipe above

Rabbit and mustard is great, or we use a coq in cider recipe and use rabbit instead.

roasted in the oven with garlic onions and sweet potatoe an d a gentlle covering of regge regge sause yum
