Title: Lemon /Lime curd

Does anyone have a recipie for lemon or lime curd that will keep longer than 3 months?

In my efforts to use up the ever growing mountain of eggs that my 5 chickens are producing, I have started making lemon or lime curd but although my family love it, they don't eat enough to get through the batch that is made and even though I've kept it in the fridge, it ends up having to be discarded.
I bought some from my local farmers market a few months ago that had a use by date of 12 months time but forgot to ask for the recipie and now cannot find a suitable one any where. Can anyone help me with this?

The only way I have found to prolong the life of lemon curd is by freezing it - I think you can do this with most recipes.  There will be a little water on top when you thaw it, but you can pour this away and it doesn't affect the taste.
