Hi all
I have a glut of tomatoes, both red and green (Not sure they will ripen now ::)) so I need your best recipes please!
I would like to make soup and ketchup and some chutney. When I find it I will put my (Jamie's) fab tomato salad recipe up.
Please share :)

I made some of the tomato jam that was in the Telegraph weekend section. Absolutely scrummy!
3 lbs 4ozs tomatoes (any colour)
2 star anise
5 cardamon pods
2-3 tsp coriander seed
1 tsp juniper berries
5 cloves
1 tsp black peppercorns
1 vanilla pod
1 orange
1 lemon
10 1/2 ors white sugar
Salt
Take seeds out of tomatoes (I didn't! Couldn't be bothered!) and chop. Cook spices in dry frying pan until they start to pop and then grind them in a pestle and mortar. Split vanilla pod, and add to tomatoes with vanilla pod with zest and juice of orange and lemon. Add sugar and salt and cook gently until sugar dissolves. Simmer for about 30 minutes until it has reduced and thickened. Bottle in sterilized jars.

I made tomato ketchup, unfortunately it didn't thicken up so i have a jar of runny ketchup!!

The mothership tomato salad:
1kg mixed ripe tomatoes
Sea salt & freshly ground pepper
good pinch of dried oregano
red wine or balsamic vinegar
extra virgin olive oil
1 clove garlic, peeled & grated
1 fresh red chilli deseeded & chopped
Put tomatoes in colander & season with a good pinch of sea salt. Give them a toss, season again and give a couple more tosses. Salt will draw out the excess moisture leaving all the flavour. Leave tomatoes in colander for around 15 mins - discard any juice that comes out.
Transfer to a large bowl, sprinkle over the oregano. Make a dressin using one part vinegar to 3 parts oil, garlic & chilli. Drizzle all over & toss.
Delicious with mozarella & grilled ciabatta

My nan used to tell me to ripen a green tomato .. wrap it in newspaper and put it in the window ... of course there are things you can make with green ones but your post just reminded me of what she used to tell me when I was a kid lol ... good ole nan!
