Hi there, im looking for some insperation,, along with my family we own a couple of butchers shops and wholesale business, im looking at selling free range pork maybe curing our own bacon, i`d very much appreciate any pointers or advice without having large initall investment, many thanks . Paul.

Hi Paul & Welcome

We bought a whole leg of pork & cured it up our chimney using oak shavings & finished it the HFW way, it tasted wonderful. 
I'm interested in training to be a butcher - Once I've perfected my French  ::)

Hi And Thanks For The Responce Donna, Im Very Intreasted In Producing Something Like That, Feel Hungry Just Reading It!!! We Have Run Butchers For Many Years But Always Been Basic, Sell Proper Meat As My Father Used To Say!, But Having Seen All These Fabulous Flavours Achevable I Think Its The Way Forward, Just Finding Best Way To Experament And Fullfilling Health Regs.
