Title: Price and cut list for mutton
Post by: Bramham Wiltshire Horns on September 13, 2017, 04:48:00 pm
Hi
Had a quote for our mutton

£38 for slaughter and butcher vac packed and labelled

Does this sound right

Cut list

2 leg joints
3x leg steaks
14 chops
2 shoulder joints
Mince (neck/breast)

Should there be other meat cuts such as fillet

I've heard good things from others about the butchers etc

Thanks in advance

We didn't make chops out of our mutton, it needs long slow cooking so lent itself to loin joint rather than a chop which is normally grilled or cooked fairly quickly. Is that list is for half a ewe I.e 1 side or the whole ewe? I think we had legs in half, shoulder in half, loin into 2 joints (4 in total), neck slices and breast. I think we paid £32 kill and cut so yours sounds about right with vac packing included.

Don't think so as that would normally be the chops/loin. It's basically cut like a lamb bar the loin, but you can do it however you want, just keep in mind it needs slow cooking.
