I put this on for WP's Princess
12 finger biscuits or Amaretto is nice
2 heaped teaspoons of caster sugar ( or Candrelle sweetener)
3 Eggs Separated
250g of Mascarpone (or Philly Cream Cheese)
250g each Raspberry and Strawberry (cut straws in 1/4s)
Method
Crush the biscuits in a basin with a spoon and stand aside
Mix the sweetener egg yokes and Mascarpone together
Whip the egg whites until very firm and gently fold into the
Mascarpone mix KEEP IT LIGHT
In each glass place some biscuit a layer of fruits and a layer of the cream mix
Cover each glass with cling film and refridgerate 3/4of an hour Serve chilled
