Post by: Gregoz on October 11, 2016, 07:26:33 pm
I have a couple of two year old saddleback gilts coming
I'm guessing they are too old to put to the boar but will they be ok to eat??

We recently took a three or four year-old cull sow - dead weight 400lb - to slaughter and then an experienced butcher friend of ours did the cut. Some bacon but we choose to have mince, which we use a lot of, instead of sausages.  However he also made us a lot of roasting joints - we have had a couple - very slow roast and they have been absolutely delicious.
