Post by: plumseverywhere on May 16, 2010, 04:31:17 pm
1/2 litre goats milk
1.7kg raw cane sugar
200g butter

melt the whole lot together and boil for 10 mins or until reaches 130C. cool for 2 mins. beat and pour into greased trays. leave to set. score before set.

Guess what I made today?!  ;D

ps. its still runny - so perhaps dont' take this as a recommendation - yet LOL

A good way to tell if it is ready (i.e. will set) is to have a glass of ice cold water next to the mixture, drop some in and  if it doesn't turn the water cloudy and holds together it's done - sounds like yours wasn't quite at that stage - have another go - but the 'ice cream goo' sounds deee-lish!

And wash it down with a couple of mars bars and some fizzy pop just to really get the dentist on side  :o

Goats milk tablet or fudge is great, we used to make a lot of tablet. In the good old days we used to sell it (along with chilled little cups of goats milk) in the goat tent at the Royal Highland Show.

Oh michale I'm all agog at your recipe. What happens next? What is it supposed to make? What will it look like?

Probably didn't boil it for quite long enough

A good way to tell if it is ready (i.e. will set) is to have a glass of ice cold water next to the mixture, drop some in and  if it doesn't turn the water cloudy and holds together it's done - sounds like yours wasn't quite at that stage - have another go - but the 'ice cream goo' sounds deee-lish!

It needs to go solid enough that you can just roll it into a ball between your fingers. If you boil it for more than that you will have toffee.

did you beat it until it goes grainy like wet sand??

Need to do this too to get the right texture, but leave off the heat for 5 minutes before beating and then stir it until it loses its gloss. Stick it in a tin. Enjoy.
