Title: Jun tea

Is jun tea just kombucha culture fed honey or is it a completely different culture? Like could I take a kombucha culture and use honey instead of sugar would that be jun tea? Because I like kombucha when I make it using spearmint or green tea, but it sometimes gets alittle strong on the vinegar side and they jun tea is more subtle.

I'm sorry you didn't have any replies, Vinnie. I was longing to  know what Jun tea is!

Am I allowed to post a picture from a book?

Mt art of fermentation book says jun is like kombucha but made with honey.tried to read it but baby is refusing bed and that's as far as she let me get!

Thanks that's ok ,I just made it the way I thought. I used a Scoby and honey and spearmint tea it turned out great. I don't know if is actually jun tea or just a milder kombucha but I think tastes real good. Only problem is I am the only one in my house that drinks it so I have lots, it is good that kombucha/ jun tea can sit for awhile and still be good or even better.
