Title: Another one for summer.......

A couple of tubs of mascapone,a load of caster sugar,handfuls of broken amaretto biscuits and fresh raspberries. Blend together the mascapone and sugar,stir in the broken biscuits and at the last,stir through the raspberries trying not to squidge too many. Top with the obligatory sprig of mint that gets discarded anyway,and try not to go back for thirds! ...... Ree

How did I miss this until today? I'm off to pick raspberries right now.
