I had a telephone call today from a butcher looking for rare breed pork, unfortunately I don't do pigs anymore so was unable to help, however during our chat I discovered that they were finding it increasingly difficult to source rare breed and unusual meats as that is what they specialise in.  I mentioned this forum to him and he was very agreeable to me putting his details on here so that those with suitable stock could contact him directly with what they had available.
They are based in Glenrothes but deal with a few abattoirs in Scotland including Millers in Grantown so if any of you think you could supply rare breed pork, lamb, beef or anything else "unusual" then the person to contact is David Smith 01592770555. Good luck.

Is he looking for large numbers and a regular supply?  We will have surplus hogget this year, but only once and all at the same time, and not very many.

I would imagine that he realises that rare breed animals don't come in large quantities from one source and is looking for a few different ones. As for specific species you'll have to speak to the man himself.
