We've rang our current abattoir and butcher and asked and they charge £2.65 per kg to make sausages….doesnt this sound high?
What are the average prices for this?
Can anyone recommend anywhere close to Powys that does kill & cut for preferably pigs and sheep…and that doesn't mind taking very small numbers?

Kate is Tregaron too far? They take small numbers and are very nice.

Thanks Bionic, they're 70 miles away which is further than we wanted to go really. We currently use the place in Rhos, but Im thinking the charge for sausages is quite high?

I think you'll find costs for kill, cut up and making sausage varies a lot throughout the country. Have you tried local butchers to see what they might charge if they can do it for someone else?

Bone out the meat, cut/dice into pieces small enough to mince, mince, provide casings, rusk, seasonings, mix, and fill into casings, link and then probably package somehow. Provide labour and a contribution to premises running costs and a little bit of profit. I wouldn't do it for £2.65 a kilo.

sounds like a mistake to me. You wouldnt be making much money on them. £1kg I was charged by a traditional butcher, bagged and labelled.

we pay £1-1.20/kg for sausages.
There'd be almost no money in it if it was double that!

50p/Lb here.

We pay £1 per pound of sausages (£2.20/kg) and our cost of production is £2 per kg inc kill, butchery, etc but nothing for our time/effort eg profit. So cost of £4.20 per kg and we sell them for £8 per kg.
We have found that, especially with sausages, the end product is so good that people are willing to pay a premium as long as they understand why it costs more i.e. pedigree animals, raised (relatively) slowly in a high welfare system.

My butcher is £1.80 a kilo for sausages - but there are another 2 butchers in my area that are more expensive (sausages aren't any better though IMHO)
If the sausages are consistently good and well packed/labelled it's not as bad as it could be ;)

Around here they charge £1 per pound (both butchers I enquiried with when doing our pigs first time this summer charged the same).

£1 a Lb here in north wales I use J Williams in Denbigh they charge the same to flavour them also aslong as its 10lb worth I sent a full pig got 160lb of sausage my bill was £200 on the nose with killing fee's

Though the initial outlay of mincer, sausage stuffer, skins costs a bit, it is easy enough and cheaper to make your own. It's also more fun!

Yes but selling them (legally) is another matter
