Well we finally completed on the land so I guess I am now officially a small holder (all be it very small) 3 acres ;D

Congratulations. I had a friend who when selling her house suggested the estate agent advertised it as with large garden . Large garden, said he, with half an acre its an estate.
So congratulations on your stately home. I hope it will give you much pleasure and few problems.

Where abouts in the world is your 'little bit of heaven'?
Not the exact location but region or county?
Can you tell us about the soil type and something about your plans?
One of the things I have had to learn over the past 2 years is that local weather/climate and the nature of the soil (clay/sandy/chalk/etc.) controls the whole process of cultivation.
The weather in this bit of Norfolk is often dry and either cold or hot. It's often windy on my land (very open/exposed site) and the soil dries very quickly. It's light sandy loam over chalk. This means that digging and planting depend on recent rain. Watering an acre of seedlings with a can is not an efficient way of spending time!
Similarly, trying to work on the land with the temperature at or below 5 with a 15 mph wind (or more) is not enjoyable after the first hour - even with heavy clothing. Lots of coats, hat and scarf get in the way when you have to do anything physical.
All this means you choose your objectives and plan according to what the land and weather will allow you (and your supply of enthusiasm) to achieve.
