Title: how long should rigor last in hung turkeys?

Hi all
turkeys were  slaughtered and  plucked on sunday
left o/n  guts in  and then transferred to a fridge

seemed to me that legs  were still stiff? 
how long does/ should rigor  last ?

Variable and lasts longer at lower temps. but should pass soon. The hock and knee joints can be a bit stiff even after rigor has passed, so check things like wings and if the legs move at the hips.

seems to be ok now ..
gutted them last night
is it  ok to use the giblets ( heart n liver)   for  stock?  after hangiong ??
