Can anyone recommend any books/ websites that I can access to help me plan for a meat retail business. Information on inputs into all species of livestock, age of slaughter, meat yields, methods of butchering and retail potential etc.
I haven't been able to find anything concise as of yet but any suggestions or information would be very much appreciated!

I very much doubt if such a thing exists.

Not exactly what you're asking for, but might be a good place to start http://www.food.gov.uk/business-industry/caterers/startingup (http://www.food.gov.uk/business-industry/caterers/startingup)

Hi Paul, currently working in Northamptonshire but studying in Norfolk and home is Norfolk, if I could ever set myself up it would be in the east, just from your username it sounds you could be a useful person to know!
