Hi all- I am probably going to have to stack about 50 of my conventional bales of hay outside. Any top tips on how to do this? I am assuming stack tight together with smallest surface area on pallets with a tarp on top?

as you say stack on pallets uncut surface to pallets then pallets on top for circulation and keep the tarp off the hay this should stop any condensation. Take some time to secure the tarp and if poss tie down and weight the bottom. Use as soon as possible as you have just built some comfortable accommodation :D
