....and I have just made our first garlic and herb ricotta cheese. Lovely with home grown cucumber and tomato warm from the garden, and a slice of home made onion bread Used to make it with cows milk a couple of years ago but events took over my time. Now those events are going to have to take a back seat while I play with the milk from our very own girl.

I do love making my own cheese. :excited: Yours looks lovely.
Can heartily recommend the "Artisan Cheesemaking at Home" book by Mary Karlin for beginners. I use it all the time. It has recipes that start from really simple and easy and gradually builds in complexity which I found a good way to learn.

Not the same at all. This is so satisfying. Everything we do here delights us even if not always perfect, though sometimes a day off would be nice! :D

Your cheese looks really good ;D We've been making soft cheese from our goats which is proving to be lovely, I had a pot of the cheap soft cheese from tesco and did a taste test, I couldn't believe how sweet the tesco stuff was compared to our own cheese, they must put a lot of sugar in it.

I admit I'm struggling to get used to goat milk snd cheese, but it's early days and I think we have a system going now which will avoid the goaty tang. You can get used to anything if you want to. :)

pop the milk in the freezer for an hour or 2.
tip - if using glass jars don't forget them and let them freeze solid, esp if filled near the top, I've cracked a very useful jar that I could get my hand in to clean out thoroughly :(

Thanks for the tip. Actually, I have no kitchen sink and the rest of the kitchen is upsidedown at the moment so all the milk is in the freezer until I have it all back to normal, I just leave a bit out for coffee. At least I know it's safe and fresh. we bought a few dozen plastic honey pots for when it's time to harvest so that's what we are using to freeze the milk in. I think I might need a bigger freezer!. The milk definitely tasts better straight from the milking
