:D Mainly pigs as this is my priority what do you do with the left over heads, trotters, liver etc. etc. I use the innards for sausage skins, I have made liver pate, not very successfully. I am running out of kind french neighbours on whom to dump the heads, and my supply of jelly from the trotters is incredible. What else can I do with them? PLEASE NOT BRAWN I hate brawn.

Use the trotters to make game or pork pies - they will provide that lovely jelly that surrounds the meat.
There's a recipe for game pie (http://www.accidentalsmallholder.net/articles/recipes/gamepie/) on the site which is delicious - I think I'll try a pork pie and let you know how that goes too.
The shanks I'll cure and smoke for lentil and ham soup - they add great depth to the flavour and the meat's great too.
The dogs usually get the liver, although the last couple of times we haven't had the offal back from the abattoir...

Wonderful thanks, the woodburner is on all day at present - pigs trotters and shanks in to the pot.
