1. I am running a dog show and I made damson jelly and crab apple jelly to sell. Should I sell these I will be prosecuted under the trades description act because, neither have set >:( I have ordered pectin and I am planning to reboil with pectin in line with manufacturers instructions. The jars are sealed so the liquid isn't going off. PPPPLLLEEEAAASSSEEEE tell me I can do this or some other way to make this work, I don't want to waste about 20 jars.
2. Last year I had a quince glut and no time to deal with them so I boiled with sugar and froze thinking I would add to apple pies over the year. With work, dogs, rescue, drama's and life.... how many apple pies have I made? Yup, zero..... I used some to make quince vodka.... do you think I could defrost and make some quince jelly, using pectin....?
My life is a whirlwind of fundraising and rescue at the moment. The rescue I support lost their shelter and are in dire straits (it's in Romania) so whatever I can make and sell at the dog show will help. I am making toys and treats as well and..... the week before I am doing the same for another rescue, running a treats stall for them... I figure as long as the money is raised... we should all help each other.

Oh and I've adopted my blind abused traumatised foster dog Denzel, he can't be rehomed and it's not fair to have him in limbo.... we've come up with a plan for restarting his brain.... when I say traumatised,,, think of a old dog who had had an utterly miserable life of cruelty and abuse, lived a year in a shelter which is just a concrete room and who is blind.... he doesn't move. But we are making some improvements

I'm surprised your crab apple didn't set, usually if you turn away for 30 seconds it's set like concrete. Yes, of course you can re-boil, how could it harm?
Put a few cooking apples in with your quinces and you should get a good result.

Made some marrow and ginger jam once, it didn't set so we made wine out of it and it was fantastic. Best wine we have ever made.
So if you don't get it to set turn it into wine. :thumbsup:

Marrow and ginger is notoriously difficult to set and always tends to be syrupy.
Both crab apple and quince should set very readily being full of natural pectin. Did you achieve a set when you made it first? Or did you go by boiling time alone? Stick it back in the pan and reboil it until you get a proper set before you fill the pots. Jellies are such beautiful colours.
