I can't make good chicken soup :( I've tried so many recipes and they are all bogging. I would like a nice, thick chicken soup please-thickened with something gluten free (can cope with corn flour if thats helpful).
I make really good vegetable soup, I make really good chicken stock, I am not a bad cook but I cannot make chicken soup-please help!

The way I make it doesn't do quantities but has a rough "recipe".
Bit of butter in the bottom of a saucepan. Add a little bit of cut up bacon and fry it for a few mins. Add onion/leek and a clove of garlic and fry until soft. Add in chicken stock, some herbs and rest of veg (potato, carrot, swede, cabbage etc) and some chopped up/pulled chicken. Bring to boil, then simmer for a few hours. Taste and add in salt/pepper if needed and then blend around 1/2 of it before eating :)

Buy ready chopped and prepared mixed veg from supermarket, cook in microwave 8 minutes in bag. Put in pan with two chicken stock pots or cubes and a pint of boiling water, mix, boil 5 minutes , whizz up a bit to thicken but leave some bite sized bits of veg. Delicious and quick add salt and pepper if needed, and some home made chunky bread! :excited:

A couple of spuds will act as a good thickener.

should have said, can't eat potatoes :) can eat sweet potatoes (but kind of sick of them tbh).

prefect for me as cant eat potatoess either- I try and eat FODMAP friendly...

Tatties not needed - veggies whizzed up thicken it enough.
