We sold our Shetland beef at £12.50 / kg last year. We sold it in roughly 10kg packs comprising joints, steaks, stew, braising steak, mince, burgers and Lorne sausage. Made up the packs, weighed them and multiplied it up.

We sold ours at £100 for a 10Kg mixed pack. That was various steaks, Various Joints mince and diced stewing steak,
Could have sold it 10 times over

I charge £11.00/kg for dexter beef in mixed boxes.

I charge £15kg for mixed with rump steaks and £20kg for mixed with sirloin, fillet sold separatly at £50kg. My forerib/sirloin/fillet is hung on the bone for upto 50days so it looses a lot of moisture hence the outragous sounding prices but I always have a waiting list so shows the demand is there.
