Title: beetroots

hi all

have lots of beetroot i want to harvest this weekend...and really fancy making a beetroot chutney as already got loads of pickled beetroot.

Have seen beetroot and orange chutney for sale in the past and really would like to try making some - does anyone have a tried and tested beetroot and orange chutney recipe? or failing that any other beetroot chutney recipes that they are willing to share?

It's not beetroot and orange I'm afraid - but I made this last year for presents as part of a home made hamper and got lots of compliments  ;D
I used red onions and did 50/50 with malt and balsalmic vinegar  :yum:

Beetroot and Onion Chutney

Ingredients
900g cooked beetroot, finely chopped
450g onions, peeled and roughly chopped
350g cooking apples, peeled and roughly chopped
110g Demerara sugar
1/4 tsp ground ginger
220ml malt vinegar
1 tbsp salt
Method
Mix all the ingredients together in a large saucepan
Bring to the boil and simmer gently, stirring occasionally, for 45 minutes
Put into sterilised jars while still hot and cover with jam lids or screw-on lids.
Store in a cool dark area. It will keep for several months.

I have a glut of horseradish - my neighbour a glut of beetroot. 

We now have between us a glut of beetroot and horseradish relish!  Yum.  Really easy to make too.  I'll find the recipe if you are still interested.
