I thought it was the flap of saggy skin under the chin Mojocafa, but I'm not sure? I know it can cause medical problems.

I am not 100 percent certain on this but I think that Toulouse Geese were brought over and with the Victorian and later poultry breeding craze here in uk the breed was developed until it became the dewlap type know in this country as Toulouse. Rather like seeing pictures of bulldogs in early Victorian times and show bulldogs today.
