Title: How much to charge for 1/2 mutton sheep

I have just sent 5 3 year old sheep off last week I'm intending to sell them boxed by the half I'm guessing each half is going to weigh 10-12kg it would be a basic butcher so leg shoulder chops diced ect. Just wondering how much I should charge
