Hi. Any clever uses (recipes) for unripe aubergines? I've got a dozen that did not make it...

1 recipe for aubergines is Moussaka a very nice greek dish. You could always preserve them in jars too.

a bit late now as you posted in December last year :roflanim: but are you sure they were unripe? Aubergine seeds come for fruit in different colours...
I suppose oil pickles (try Jamie's amazing pickles, copy and paste doesn't work for me here, sorry) will work.
I made them and it's really nice,

We made the most lovely spicy aubergine chutney last year with some leftover ones but I tend to hoard all mine to make moussaka with our own lamb and onions. Yummy!!!
