Title: Globe artichoke recipes?
Post by: marigold on August 11, 2009, 02:41:32 pm
Does anyone know how to turn home grown artichokes into those delicious artichoke hearts that you get in the deli?

There's a recipe here

http://www.gourmetsleuth.com/marinatedartichokes.htm

I have tried several methods (all very tedious in preparation) and never found any as good as deli ones!  You have to use baby artichokes which all seems very wasteful (unless you have loads, or have a PYO nearby) for best flavour and I prefer to slightly char grill them before they go in jars to add a bit of flavour.  I love globe artichokes when they are huge and make a whole meal for one!

Great thank you
I will have to save it for this year as our artichokes had grown too big - which I didn't realise until I read this.
However we did have one each for tea tonight with garlic mayonnaise, they were delicious.
Thanks again
