Title: Bramble or plum upsidedown cake

Kiss your diet goodbye with this.
 
Grease the sides of an ovenproof ceramic deep flan dish (or similar).
Spread a layer of either brambles (blackberries) or halved plums over the bottom.  How deep is a personal choice.
 
Spread over the top a layer about an inch or so deep of standard sponge cake mix - weight of the eggs in butter, sugar and SR flour.
 
Bake at 180 deg until the sponge is done.
 
Turn upsidedown onto a plate.
 
Eat hot or cold, with icecream, cream or custard, or with your coffee break.
 
You can make this with any fruit really, I just used plums and brambles because I have loads.  It's a thin Charlotte really but with the advantage of seeing and admiring the fruit, and being able to eat it like cake  :hungry:

Mmmm that sounds good.
I picked some blackberries yesterday but have put them in the freezer. I might just have to get them out again  ;D

We have this quite a lot but usually have it upside down (ie the sponge on the top)  :D
