Title: Beef sausage recipe

Anyone have a good recipe for beef sausages ie the ratios of lean meat, fat rusk/breadcrumbs seasoning ect. And do you put pork/ pork fat in a beef sausage?

I wish I knew! ::)  I love beef sausages and they are so hard to get hold of in England. I've spent quite a bit of time in Northern Ireland where beef sausages are more popular than pork and soooo delicious. Perhaps some Northern Ireland websites would have the answer?

I'd recommend looking for Lorne sausage recipes, but maybe mix of pork and beef.

when we moved to australia yonks ago - all the sausages were beef, when i asked for pork sausage i was looked at like zomby!  :roflanim:
