Thinly slice from top to bottom,so they look pear-shaped,brush with olive oil (lots of it) then griddle or bbq.
Or,as before, but use them to wrap mozarella and a bit of garlic.
Or,julienne them, fry with chopped bacon, garlic, toss it all in with spaghetti, rip up some fresh basil, grate some parmesan and throw in some dry toasted pine nuts, cracked black pepper and dress with a drizzle of olive oil.
Or,there's always goulash! .......Ree

I was I had a Lidl near me! I love aubergines, and most of them seem to be about £1 each at the moment, which is outrageous!
My favourite is a dip (made in a microwave)
1 aubergine, 1 tbsp olive oil, pinch chili powder, half tsp ground cumin, half tsp ground coriander, small garlic clove chopped, 2 tsp lemon juice, quarter pint natural yogurt, chopped parsley.
Prick the aubergine microwave on full for 8 or so minutes (Until very soft) Put olive oil with spices and garlic and microwave for 2 minutes. Stir in lemon juice. Cut aubergine in half and scoop out flesh and mix with spice mixture mashing up with a fork. Season with salt and pepper and mix in yogurt then parsley. Serve with warmed pitta bread to dip and perhaps some strips of red peppers. Yum! So jealous!

make a lovely curry or you can stuff and bake them. My kids love them sliced and fried or baked with some oregano. they soak up lots of olive oil which makes them so tasty, lol :&>
