I have an air dried ham hanging from last Oct (suppose I ought to try it now ;D )
We have just got ourselves 2 more weaners but this time they will go off towards the end of July so it will be too warm (if we do get some summer) to hang the legs.
Can I freeze it and then air dry it in the autumn?

Our 3 air dried hams are still hanging up as well...! :innocent:
Year before last we slaughtered the pigs end of July and then salted the hams for 3 weeks then hung the hams - they turned out very tasty :thumbsup:
Last year the pigs went at end of June, hams were again in salt 3 weeks then hung - as per start of post we haven't tried them yet so can't say whether they have suffered yet.
Have no idea about freezing for a bit then doing the slating etc sorry!
