Title: Pig Butchery Books?

Hi, can anyone recommend any butchery books for pigs? My hubbie is thinking about taking this skill up and would like a good book to get his teeth into.

Dunno about books but if he fancies going on a course Coleg Menai do a great one day pork butchery workshop at their Food Technology Centre in Llangefni. It's cheap if you've got a CPH number as you get a hefty discount.

Oaklandspigs, that is such a useful website! Thank you for posting the link. Wish the meat promotion people in Wales were as good as those in Scotland!
