We bought a salami kit from Weschenfelder and followed the recipe but had lost the in-depth instructions by the time we got around to making any...... so I don't know if what's supplied with the recipe is enough to make it really garlicky.
Anyway.... we are where we are.
We used the beef middles that came with the kit and we have produced these huge......... logs :o :o .
Is this right?
At the moment they are just airing in the kitchen to get them started and then we'll hang them up in the workshop but I think we have cut them) too short and I'm worried that the string won't hold them (I'm afraid we just used some embroidery thread that I had to hand... ::) ).
Would it be too problematic to hang them in - say - the netting that comes around bags of oranges/onions and hang that?

That's fine, beef middles are large and the salami's will shrink anyway. :wave:

They seem to be firming up nicely in the kitchen. We need to hang them in the workshop now.
I'll report back in 3 months!! Then we'll know how much garlic to put in the next lot ;D ;D
