Title: Turkey Time

It is time for my turkeys to be dispatched, I was just wondering when they need to be done and how long they can be kept in a fridge before cooking. I was intending to dispatch on Thursday morning. Hang for 24 Hours and then prepare on Friday. Then store in fridge. Is this too long ??

I usually kill up to 10 days before, pluck and hang in a cool place and dress about 2/3 days before Christmas, keeping them in a fridge from then.  They have always been fine.  I'd hang for longer and prepare on Sunday or Monday for a better flavour.

Ours were done yesterday and will be dressed Saturday or Sunday depending on when people want to collect them. 10 days is great as long as you can keep them really cool. I always panic about the weather! Really must get me a cold store.........keep asking Santa but no luck so far
