Title: Cold store for hanging meat.

Hi,I have a cold store for hanging meat,basically an old unit from a van,what is the best temperature to set this to.
I will be hanging geese,turkeys,chicken,mutton and pork.

My local F & S person wants to see a temp no higher than 8 degrees for refrigerated meats.  These are meats sealed in packets, so not sure if it is different for exposed meat.
