Title: Anyone make tempura batter?

There is quite a lot of variation in the recipes on line. Has anyone got a tried and tested recipe?

i have tried many sometimes they work sometimes they dont...


thats the same recipe that can do either...


most important point is to keep it really cold...

I bought tempura flour from a pack from Waitrose which had to be blended with sparkling water. Worked well.
