Came across this recipe last night, Cucumber, Ginger and Vanilla Jam.
Has anyone once else made this or a variety? We have an unusual glut of cucumbers in the poly this year so apart from pickling and chutney I have been looking for other ways to use up.
Any other suggestions?

500gms Cucumber
80gms Ginger
1 Vanilla Pod
350gms jam Sugar
Weigh the sugar and put into a large saucepan
Cut the vanilla pod in two, de-seed and put pod and seeds into the sugar
Chop the cucumber into tiny cubes
Peel and cut the ginger into tiny pieces
Add both cucumber and ginger to the sugar and vanilla and mix well.
Leave for two hours
Bring to the boil stirring to dissolve the sugar.
Keep at a rolling boil for 7 minutes.
Pour into sterilised warm jars.

It sounds a bit like Marrow and Ginger Jam. Let us know what it tastes like :yum:

Yes we have an unusal glut of cucumbers here too... one of the few things we managed too grow well this summer (although the polytunnel did actually do alright, it's just outside I have given up).
Making fresh cucumber pickle twice a week at the mo, and then slice the excess ones freshly and then freeze, will make ok cucumber pickle in the winter...

I must say I have never heard of cucumber jam. If you make it please let us know what it tastes like.

I imagine it is similar to marrow and ginger jam which is yummy. My mum used to make it. If you have that many cucumbers, it's worth making a small batch to see what it's like. It won't cost a fortune and you might find you love it. If you hate it though, you could always give jars of it as Christmas presents to people who always give you awful presents. ;)
