Title: Carrot Pate

Many years ago a friend gave me Carrot Pate as a starter and when she put it down in front of me I thought this will be yuck. Well, it is delicious, simple and quick to make. I even put it on the menu in the hotel and almost every one comments on how good it is. Try sometime;

1 tub of Philadelphia Cheese (for some reason the full fat one gives a better result than the (lite!)

If the cheese tub is say 250g you will need 500g of carrots. You use double the carrots to the weight of the cheese.

Peel and cook the carrots, add some salt, once cooked mash them up.

Drain any excess liquid off. Leave to go cold and drain again. It is important to get rid of any liquid.

Chop some Spring Onions and add to the carrot.

Add the Phili Cheese and give a good mix around, add salt and pepper as required.

Stick in the fridge for a bit. Eat and enjoy - it is delicious and different.

Full fat anything tastes better than "lite"!

I have to confess, I don't fancy this but might give it a try anyway just to see if I agree with you.

I read this as Parrot Pate - should have gone to specsavers!  Sounds good - will be trying it out.

The funny thing is I actually have a Parrot!! ha ha ha
