Well Hi Everyone
I Have just got through reading the artical on the Bacon making and due to the fact that I retired to Belize Central America some eighteen years ago after 25years service in the Britsh army and not beeing able to buy anything localy that looks or tastes like real Back or streaky bacon I have been making my own also many types of English and German sausages.
I Live 11½ miles outside Belize city on the outskirts of a small village it was a very quite area when we first moved in but over the last 18years it has developed a bit and that put a stop to rearing our own pigs but I can still get a good deal when I buy them slaughtered and ½ed the rest I deal with my self.
We have 5 acers with two ponds both with fish in the wet season that we harvest and sell what we keep for our own use we smoke and freeze enough to keep us going untill the rains come in again and the next crop start again.

Wow thats really interesting. Please do publish your recipes in the recipe section, I am always searching for new ideas. We keep pigs, ducks and chickens here in Brittany, France.
Belize sounds very exotic. Would love to hear more.
