Which breed?   Our primitives go for slaughter at 16 months, so in early August.  Most of ours are entire, so we keep them well away from the females while they fatten.  There is no 'taint' - they haven't started to heat up for the breeding season in August but have had the benefit of a season of good grass to get up to weight.
I don't have a clue about non-primitives  :)

Get the vet to castrate them and sell them as lawnmowers or for fleece production, if they are a suitable breed.

Or put them in the freezer. I'd give them a few months at grass though - supposed to improve the meat quality.
