Used to make this with my son,a great recipe to get kids involved and so quick and easy to do.....
Put the oven on to warm up,220*C.
Take one pot of yoghurt (normal,125g size) tip into a mixing bowl. Wash and dry out the pot.
Using the pot as a measure,add in 3 pots of self-raising flour,1 pot of sugar and 3/4 of a pot of cooking oil (sunflower). Add 3 teaspoons of baking powder and 2 eggs. Mix it all in together,chuck it into a 2lb loaf tin and then into the oven.When you close the oven door,turn down to 200*C and keep an eye on it for up to 20 minutes. Eh voila!
Loads of variations to this,round tins,add in some jam,chocolate chips,raisins soaked in rum,caramelized apples,drizzled honey,the list is endless and up to your imagination.
