Title: Courgetti Spaghetti

If,like me,you end with so many courgettes you don't know what else to do with them,here's my recipe for a very quick meal. (easily transformed to a vegetarian option).

Using a potato peeler,peel courgettes down to nothing,keeping the strips and discarding the ends.

Put yer spag onto to cook in the boiling water.

Dry toast some pine nuts in a wok and remove when browned.
Slug of olive oil in the hot wok,add in the courgette strips,(sliced mushrooms, strips of bacon,optional) and stir fry until slightly browned but not soggy.

Strain and drain spaghetti,add to wok with a large knob of butter and the toasted pine nuts.

Portion out onto plates/bowls....... then rip fresh basil and grate fresh parmesan over each serving. Sometimes I add strips of parma ham at this stage if I've not used bacon.

I've got the prep and cooking time down to 6 minutes. Bon apetite

Sounds rather yummy, thanks for the recipe, will give this a try.... once my courgettes have grown  ;D
