Hi - can anyone suggest the best way to roast a 3 kg duck. We eat duck a lot but I have never roasted a whole one. I see lots of tips on TV of how to "roast the best turkey" so wonder if anyone has a pr oven method for duck. Off to harvest the festive veg now :thumbsup:- brrrrrrrr.

I follow a good housekeeping one which is 24hrs before roasting pour 2 kettles full of boiling water over duck, this melts a lot of the fat, let it drain for 10 mins then dry with paper towels, put back in fridge for 24hrs when ready to cook rub with a salt & sherry mix and then roast uncovered for 20mins/1lb + 20mins, Start oven at highest for 20 mins and then turn down to 180 deg cee skin should be crisp & golden check in thigh that not bleeding and enjoy, we have it with hoi sin sauce and chinese pancakes

It's a long time since I roasted a duck (which is criminal, because we love duck) - one tip I do remember is to roast it on a wire rack so the fat collects below the bird. Some water in the roasting tin will keep it moist.

And spread over it a good spoonful of honey and the juice of an orange :yum:

cook it upside down for the first half of the time then right way up for the rest.then the juicyness gets to the breast.

Thanks all - I,m thinking of combining all your suggestions-
1. pour a couple kettles of hot water over it.
2. dab it dry with a paper towel.
3. Put in fridge for 20 mins.
4. Cover it with honey and orange juice
5. Cook on a wire ( above some water) for 20 minutes on a high heat then 20 mins a pound plus 20 for luck.
Any thoughts on if I should stuff it or simply put an orange in it - just kidding as roast duckt
sounds so good - I am seriously thinking of a practice run using Kiki - she may or may not be laying eggs at the moment but she is the oldest of the females we have left. The big males made great cassoulet and their breasts cooked crispy but rare.
Muscovey ducks are so the best eaters !!

I REALLY fancy duck for christmas dinner. Won't get it though. I suspect we'll be on supermarket pork or beef. It is being cooked for me though, so I won't complain.
