Yeah, I've had a dabble and written quite a bit about it on my blog (http://brixtonsbounty.blogspot.com/search/label/chorizo).

HFW "Rivercottage cookbook", your local library will have it if you don't have a copy yourself.

The spices company Bart sells smoked paprika which we've used in salami's instead of ordinary paprika - it's divine! We can buy it in Waitrose here, but other supermarkets probably stock it as well.
