Title: Elderberry Jam????

 ;D and No I am not joking! is there such a recipe and can anyone advise of one if so?


I just thought,well if you can make wine with it,surely jam would be ok?  ???

i made it last year!  just made up the recipe and made it like a jelly..also made some with apple and that was nice too, not such a strong flavour.  Nice added to sauces & stews and the like. just go for it :)

I tried making jelly with elderberries. I just remember that it wouldn't set and we ended up using it as sauce on icecream, until we were sick of it. Never tried again, but if I did I would want to mix it with apples or something to increase the pectin content and then hopefully it should set.

I think I remember eating some elderberry and gooseberry jam.  Very unusual and delicious.

I know what I shall be doing over the weekend,I'm currently simmering some Mirabelle plums-making jam at this time of night! ;D

I often use elderberries when I'm making "hedgerow" jam or jelly, which is what I've got lurking about at the bottom of the freezer.  I think it would need something with pectin to help it to set. E/B syrup is good for coughs and colds.
