Title: Yellow fat- Rick Stein likey!

Has any one watching/watched Rick Steins Spain. As he just had cooked for him a steak thick in yellow fat from a 12 year old dairy cow. All he says is wow!

Shows that there is a market for dairy beef if done correct!

I have heard that some of the finest and best marbled beef available is from eiher a gurensey or fresian fattened heifer, beats most of the other beef breeds hands down!

Yellow fat is fantastic - it's the betacarotenes from lush grass that make it so; similar to "real" butter being brighter in spring and summer.
Yummy!
