going to collect some wood pigeon tonight, any ideas on best way to cook ???????????????

Take the breasts off, cut the meat into strips, marinate in soy sauce ginger and garlic then stir fry same as any other stir fry.
or cut into cubes with the same marinade put on skewers grill or BBQ serve with satay sauce
or Mexican style in tortillas
Pigeon with peas
Boil spuds until cooked. put to one side. Boil peas 2mins. save some of the pea water to dissolve a chicken cube. Slice across bacon to make little pieces (lardons). Slice an onion. Heat some oil and butter in a frying pan brown the breasts then take them out. fry the lardons crispy. Add onions and a teaspoon of thyme, turn down the heat soften the onion. a little flour. put the stock in stir, thicken sauce turn down the heat to simmer,put the peas in. Cut the pigeon in slices put in the pan with it's juice. Simmer for 5min, then serve with spuds, or add them to pan.
The easiest way to treat a pigeon is to remove the breast. Small incision at the bottom of the breast bone, thumb in pull the breast out and cut it out whole with the bone. No plucking easy. The rest of the bird has so little meat on it it's a bit of a waste of time. This is all I do no doubt someone else will do something completely different. I would be interested what others do.
