We sent two of our girls to pig heaven last week and asked our butcher for a selection of sausages from the largest one (89kg deadweight!!!) and joints etc... from the other.
On collection we got back 42 kilos of sausages, does this sound about right? I was expecting more than 42 kilos. I realise the deadweight will differ once it's boned etc... The trouble is the sausages are delicious and I don't really want to find another butcher, but if we've been diddled... the sooner I can get myself on a butchers course the better.
Any feedback will be most welcome. :pig:

It depends on how much meat content are in the sausages and how much trimming of excess fat the butcher had to do. If the carcase was fat and the sausages are high meat content then it's not too far out.

I agree, if they are high meat content then that is about right.

Why not ask butcher to do the butchering, then have the bits back and make your own sausages. Even I can do it so it cant be difficult.

My first two pigs we got about 23 k of sausages off. The next two I was very specific about the cuts, and I ended up with very few sausages, but lots of meat I could then do my own with. I guess it all comes with experience and how much you like sausages! I find it a bit like gardening - I always have way too much of the things I use the least!
