Title: Hedgerow recipes

Hi all,

Starting a little business making homemade jams etc etc, anyway i have done some sloe, damson, crab apple and quince recipes. just wondering if anyone has a recipe for Rosehip jelly?

also any other hedgerow recipes that people have would be great.

oh well back to the stove  :wave:

Hedgerow jelly is lovely.  You make it with a mix of whatever you can find, as long as it includes crab apples for set.  You might find rowan berries, blackberries, rosehips, sloes, elder berries, wild raspberries - whatever your area has.  Boil them all together with enough water to cover, strain through a jelly bag, measure and add 1 lb sugar for every pint of juice.  Makes a lovely dark jelly.

I made rowan berry and apple jelly which is a lovely soft pinkish red but has an odd taste which is definitely an  acquired one.  I love it now, but someone has to eat it!  Goes well with curry - cools it down.

Sorry - I looked quickly and saw this as HedgeHOG recipes!  ::) Saw them baked in clay once.....  :P
