Title: Very easy / quick Banana Muffins (use up those ripe ones)

125ml veg oil
200g Sugar
250g Self R flour
1 egg
3 bananas

If desired either nuts or coconut can be added (see below)

Mix oil and sugar in mixer then add egg.  Mix well till egg is beaten in.  Add 3 ripe bananas mix.  Sieve flour fold in.  Add a handful of chopped nuts if you like them (30 g).
Put in muffin cases and sprinkle a little coconut on the top if you want a crunchy top. (makes 12 big ones)

Oven 175C for about 30 Minutes

My kids have been demanding these every week - good way to get one of those 5 a day in (if you dont mind the sugar....!)
