My Mum's take on this version of beef olives:
One per person:
A small pickled onion between two half gherkins wrapped that in smokey bacon and then wrapped in hammered out cheap steak. Either hold it together with cotton thread wound round or just a wood spike through it (one of the things dogwood's good for). Casserole with your choice veggies and stock.
